The best Pumpkin Parfait

The U-LUV Foods Pumpkin Parfait

This vegan, gluten-free, dairy-free, nut-free goodness is a perfect treat. 


  • 1 - 3.4 oz instant vanilla pudding mix

  • 2 cups cold milk OR  your choice of So Delicious Dairy Free

  • 1 - 15 oz can pureed pumpkin

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/8 teaspoon ground cloves

  • 1 cup U-Luv Spicy Ginger Cookies--

  • 8 oz frozen whipped topping, thawed  OR So Delicious Dairy Free

  • 9 - 1/2 pint jars or 8 oz. glasses


  1. In a large bowl, whisk together pudding mix and milk. Let set for 5 minutes.
  2. Stir in pumpkin, cinnamon, nutmeg & cloves.
  3. Place U-Luv Spicy Ginger Cookies in a blender or food processor to make crumbs.
  4. In small 1/2 pint jar or glasses layer cookie crumbs, pumpkin pudding and whipped topping. Repeat the layers twice and end with cookie crumbs.
  5. Chill until you're ready to serve. Enjoy!
